The Di-Eggo! (Diego Eggo)

We are enjoying the last couple days of Winter Break and I can't help but spoil my boys with special treats :) Yesterday we made Mickey Mouse pancakes for an afternoon snack using our new Mickey Mouse Pancake Mold

and this morning I made Di-Eggo's! These are Eggo waffles topped with Nutella and banana and made to look like the cartoon character Diego.

I pretty much just freehanded this project. I printed out a picture of Diego to use as a guide and used a piping bag to pipe on the Nutella onto a toasted Eggo waffle. The eyes are banana slices with Nutella eyeballs and banana pupils. The mouth is also Nutella with a banana slice tongue. I wouldn't say this is the most healthy breakfast but it was a fun treat for our winter break vacation :)
