Crock Pot One Pot Chicken and Veggies

I’m thrilled with how this Crock Pot One Pot meal turned out! I got the idea from Damn Delicious blog but decided to use the sauce from my Weight Watchers friendly Honey Garlic Chicken. I loosely based my version off of hers using:

– 6 boneless skinless chicken thighs
– Half of a 16oz bag of baby carrots (8oz)
– Half of a 12oz bag of green bean (6oz)
– 5 quartered red potatoes

– 1/2 cup low sodium soy sauce
– 1/3 cup honey 

– 4 garlic gloves (minced) 
– 1 tsp basil 
– 1/2 cup ketchup
Mix up sauce in separate bowl. 
Place chicken in middle and put potatoes on one side and veggies on the other. 
Pour sauce over just the chicken.

Cover and cook on low for 6-8 hours. I cooked mine about 7 hours. If you can, check on it once or twice to dunk the veggies, making sure the ones on top get a chance to soak in the sauce.

Tender, juicy, and delicious with plenty of extra sauce! Plus there is no need to worry about side dishes because your complete meal is right here in one pot!
