Crock Pot Shredded BBQ Chicken

March 14, 2012

One of the easiest meals to make in the crock pot is barbecue chicken. All you really need is a bottle of your favorite bbq sauce and a couple chicken breasts, dumped in the crock pot for 6-8 hours on low. But I felt like adding a little kick to my bbq chicken this time. I came across this recipe and thought I would give it a try. And I’m glad I did because it had the perfect tang and zest to it! I am will definitely be using this recipe again.

Ingredients:

– 4 frozen chicken breasts
– 1 12oz bottle of your favorite BBQ sauce (I like to use Sweet Baby Rays)
– 1/2 cup Italian salad dressing
– 1/4 cup brown sugar
– 2 tablespoons Worcesteshire Sauce

Note: after taking the picture above, I noticed my Wish Bone Italian dressing expired in 3 days and that is just too close for comfort for me. So I used one of our favorite Italian dressings: Bernstein’s Restaurant Recipe Italian Dressing and Marinade.

Directions:
1. Place chicken in a slow cooker. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
2. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low. (I cooked it on low for 6 hours)
3. Shred the chicken while it is still in the crockpot and leave it in there on low (or warm) setting for 30 minutes to absorb the sauce.

Serve on hamburger buns or sandwich rolls. It’s perfect with a side of coleslaw!

I was just wondering what to do with a pack of frozen chicken breasts!

Thank you so much for the recipe. With the beautiful weather here, Crockpot dinners are so great because I can spend the day outside while dinner is doing it's thing. This sounds SO good!!

Sarah. I saw your post this morning when you woke up and being a girl who doesn't cook – crock pot recipes are my favorite! I had all the items this dish called for so I rolled out of bed, threw it in, and had the best dinner!!!! Thanks for the idea! Keep them coming! – Michelle

That looks good and so simple! I rarely use my crockpot, but I think the problem is that mine is so big— I need to get a smaller one so that I can start making some of these recipes!! I see coleslaw in the background- do you make your own? I've never made it, but my husband loves it so I really should give it a try. Thanks for sharing at Food Adventure Friday!

I have a larger crock pot as well as a two smaller ones. I do most of my recipes in the big crock pot! This recipe was made in the larger one. The coleslaw was not homemade. I bought the mix in the salad section of the grocery store. I'm all about easy over here :o) One day I will have time to learn how to really cook!

Oh this looks YUM! I've recently been craving bbq spare ribs like mad so we've been having chinese takeaway far more than we should. Obviously when I got round to buying a bottle of bbq sauce I didn't want them anymore so I have been wondering what else I can make using my bottle. I think I know now 😉

Can you use fresh chicken breasts, as opposed to frozen…or does it not come out as tender?
