Watermelon Blueberry Popsicles

August 5, 2012

We are cooling off this weekend with some homemade watermelon blueberry popsicles! We also think these look a lot like rocket ships. With the blueberries being the portholes…do you see it? Anyway, we picked some really juicy blueberries at the u-pick and couldn’t resist the fresh seedless watermelons at the farmers market. I thought these two would make a yummy treat.

Ingredients:
3 cups chopped watermelon
1 Tablespoon sugar
2 Tablespoons lemon or lime juice
1/2 cup blueberries

Directions:
Put 3 cups of chopped watermelon in the blender with sugar and lime/lemon juice and blend into a puree. Put blueberries in popsicle mold (our molds are from the Dollar Tree) first and then fill with watermelon puree. Freeze until firm. Enjoy!
