Easy Peanut Butter Oat Bars

A couple of my blogging buddies have been sharing some fabulous looking peanut butter bars over the past couple of days. Like these Peanut Butter Bars from Artsy-Fartsy Mama and these yummy looking Peanut Butter Bars from Happy Hour Projects. I couldn’t resist any longer, I HAD to have some for myself! But you know me, I love my crock pot and thought, hey maybe I can bake some bars in the crock pot?! I altered a recipe for baked oatmeal that I found over at A Year of Slow Cooking. 
Everything was looking good. I mixed all my ingredients in the crock pot. And cooked it for about 3 hours. Let it cool and cut it into squares. So far so good…
They didn’t look too bad, but when I took a bite… YUCK! They were dry and tasted like plain oatmeal. I actually contemplated faking it and writing up a tutorial anyway, pretending that they were good. But I couldn’t do that to you. So I came to the conclusion that not everything can be made in the crock pot 🙁 Although I am sure if follow her recipe the way it was originally written, you will have some fabulous baked oatmeal. But I didn’t want oatmeal. I wanted peanut butter oat bars. I then found a great recipe over at Cooks.com and it was perfect! And very simple. I had all the ingredients in my house.

Ingredients:

1 1/4 cup all-purpose flour
1 cup brown sugar
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter, softened
1 tsp. vanilla
1 egg
1/2 cup peanut butter (I was a little short on butter so I added a little extra peanut butter)
1 cup quick oats
1/2 cup chocolate chips
Mix all ingredients except for oats and chocolate chips with mixer. 
Stir in oats and chocolate chips and press into greased 9×13 pan.
Bake for 20 minutes at 350 degrees.
The result? FABULOUS!! These bars are so tasty with the perfect mix of oats, peanut butter and chocolate chips. The boys loved them too (of course!).

    Yum yum! These look amazing! Thank you for sharing:-) Would it be okay if we used this recipe as a county fair submission next year? My daughter is in 4H and always likes to make baked goods for the fair.

    I followed the recipe exactly as listed above and the end resultlooked good but they were extremely dry… not sure why…

    they are delicious but a little dry! (and i accidently forgot 1/2 c of brown sugar) I might try adding more butter to it?

    I just let my five year old make these. I must say watching her measure up the peanut butter and press the dough into the pan was entertaining. Maybe I'm crazy letting her do this, but I just want to say that they are super easy and that is wonderful. Thanks for the recipe and thanks for all your cute ideas.

    Just made these , and they are very good. I used a little more organic butter and less peanut butter to get them moist. I substitute chocolate chips with , sweetened cocao nibs.

    This is fast, easy and oh, so yummy!!! I used crunchy peanut butter and they were gobbled up. This is definitely a keeper!!!!
