Crock Pot Spaghetti Squash and Meatballs

The hardest thing about sticking to a diet is trying to avoid carbs. Bread, chips, crackers, and especially noodles are my weakness. Fortunately I recently discovered spaghetti squash! This is an amazing substitute for spaghetti noodles. Not quite the same flavor but it has a stringy texture like noodles and tastes great with tomato sauce. Best part is that unlike noodles, spaghetti squash is extremely low in calories. Just about 30 calories in a one cup serving. I could seriously eat this stuff all day long. Oh wait, I have been! I usually eat at least 1 of them per week. You can easily microwave spaghetti squash (about 20 minutes on high) but you can also stick it in your crock pot and make a meal of it! I cooked it with some seriously good homemade turkey meatballs. My husband devoured them!

Ingredients:
For low-fat Turkey Meatballs:
– 1lb lean ground turkey (like Jennie-O)
– 3 large egg whites
– 1/2 tsp poultry seasoning
– 1 clove minced garlic
– 1/4 tsp salt
– 1/3 cup plain breadcrumbs
You will also need:
– 28oz jar of light spaghetti sauce. I used Ragu light tomato basil. (50 cals per 1/2 cup)
– One spaghetti squash. 
Directions: 
1. Mix all meatball ingredients in a bowl. Shape into 1/4 cup size meatballs. I made 14 balls.
2. Pour sauce into bottom of crock pot.
3. Cut spaghetti squash in half and scrap out seeds.
4. Place spaghetti squash (cut side down) in pot. I got a large squash and was only able to fit a half of it in my pot.
5. Place meatballs in sauce around the squash.
6. Cook on high for 3 hours or low for 5.
7. Using a fork, scrape out the squash. It will come out in spaghetti-like strings.
8. Top with meatballs and sauce.
Note: I made my meatballs the night before and then popped them in the crock pot early the next morning.

Weight Watchers Points:
Meatballs = 10 points for 2    1 point each!!!!!
UPDATE: The meatballs are big but I was thinking 10 points seemed like a lot. So I just went back and looked at the Weight Watchers Recipe where I got my info and they were calculating the points of spaghetti noodles with the meatballs! No wonder! So I just entered all the meatball ingredients in my Weight Watchers App and they come out to be 1/2 point per meatball!! Although I would make them 1 point each just to be on the safe side. This dish just got a whole lot better!!! Thanks to my Facebook followers for questioning the points as well.
Spaghetti Squash = 0 points!
Ragu Sauce = 1 point per 1/2 cup

    I've never had Spaghetti squash before, but it looks really good!!! My husband is a diabetic, (he's been taking insulin since he was 6 years old, and will be 40 in March) I'm thinking this looks like a great meal to fix for him, so that he will be able to have enough to fill up!!!     My husband just asked me this morning – "what do we do with the spaghetti squash in the garden" – he thought it was like a zucchini but I told him no, it'll be like spaghetti hence the name! I'm saving this recipe, I'm going to show him tonight when he gets home!

    While I have nothing against carbs, the more natural the foods the better, and a great idea of just plunking the squash right down in the sauce. Brilliant! I'm going to make a meatless version of this.
