Crock Pot Ranch Chicken Tacos

March 1, 2014

I have a weak spot for Mexican food. Tacos, enchiladas, fajitas, beans, rice… I could seriously eat it every day! Too bad this doesn’t fit into my diet plan so well. Until I came across Weight Watchers Ranch Chicken Tacos! So easy, so good, and so diet friendly 🙂

Ingredients:
– 3-4 Eating Right (97% fat free) chicken breasts
– 1 packet low sodium taco seasoning (I chose Mild)
– 1 packet Ranch seasoning mix
– 2 cups low sodium and fat free chicken broth
plus
– shredded lettuce
– pico de gallo or salsa
– light or fat free sour cream
– taco shells

Directions:
1. Put chicken, taco seasoning, ranch seasoning, and chicken broth in Crock Pot.
2. Cook on low for 4-6 hours
3. Shred chicken with fork and let it soak up the broth.
Serve in taco shells topped with lettuce, tomato/salsa, and sour cream.

This shredded chicken is so flavorful, moist and tasty! Perfect for tacos, tostadas, enchiladas, salads, and soup! I even added a little of it to some pre-made tortilla soup from the grocery store deli. YUM!

    Oh those look gooood… even though I'm a vegetarian! I have a crock pot, but I've never used it.. Hmm, maybe it's time to whip it out and figure out something as good as this in vegetarian form. 🙂

    This was pretty good! A little salty so next time i would do half chicken broth and half water. But very tasty none the less! I will definitely make again!

      You can use low sodium chicken broth. That way you control the sodium. The only time I use regular chicken broth is when I’m making holiday gravy.

      I agree that this is very salty, and I like salty stuff. I would skip the chicken broth and it was very soupy. The pChrisicture above with the taco and a bowl of soup, that’s how this turns out if you use the amount of liquid this recipe calls for. I put a bunch of Mexican cheese and cream cheese in it to thicken it up. My last suggestion I will make is using half the amoun of ranch and taco seasoning.

    I made this tonight. To answer the questions above, I used frozen breast and put crock pot on low, let it cook all day while I was at work. When I got home I shredded the chicken and left in broth for about 40 minutes. We made "taco salads" added doritos for crunch. Was very good, everyone liked it and that's not easy to accomplish in this house. 🙂

      I often make different styles of chicken in my crockpot. I put in extra chicken broth, and use that extra to make gravy with, and pour it over my homemade mashed potatoes. I also serve my special version of Spanish Rice. It is a family favourite.

    Sarah – I enjoyed this recipe. I cook for just my husband and I and while I love crockpot cooking – it is a challenge to cook meals that do not end up tossed because there is just too much food for two people. We had the chicken tacos and then I used the leftover chicken for tortilla soup the next night for Bible study. Success!! It was a hit both nights. Thanks for sharing this recipe.

      I would say, yes, but if you use breasts they might be tough on high for 3 hrs. You might want to use boneless thighs instead.

    I pinned this recipe however long ago and was looking for something easy peasy to make for dinner. I threw this in the crock pot, just as the recipe called for and 6 hours later I shredded the chicken and it soaked up all the juice. We're having tacos and my older son (8) gave the chicken the thumbs up. Thanks!

    Tried this, turned out so good. Slow cooked for 8 hours, while at work, came home to a hot cooked chicken tortilla soup for me and chicken crispy tacos for my family. Yummm

    I have been making his recipe for years, it’s the only recipe my husband doesn’t get tired of! It’s so. I’ve to have the chicken prepared for all sorts of meals throughout the week such as tacos, stuffed peppers, stuffed shells, salads, casseroles, etc. Such a great, flavorful, easy recipe.

        I just put this in the WW recipe builder and assuming 6 servings, it comes out to 3 smart points per serving, but that does not include shells or any condiments. You should account for those separately.

    LOVE THIS! I have made it a few times now, only I use my homemade Taco seasoning. We love this on flour tortillas, as is, or fried. Lettuce, salsa, sour cream, sometimes we even add cilantro lime rice. It is delicious and it’s my favorite meal now.

    Beware. The ranch dressing packet is full of msg. Msg leads to weight gain and that is counter to eating on the weight watcher plan.

    This chicken is amazing! My whole family loved it. I drained it in a strainer and we used it in quesadillas and tostadas. There are so many things it can be used in but it is so good you can eat it by itself. This recipe is a keeper!

    First, thank you for sharing this recipe! I have been wanting a good chicken taco recipe. My family doesn’t like their taco meat spicy. I usually use half a package to 1 lb of ground beef. Should I double the chicken in this recipe given the ground beef ratio they like?

    I made this today. It smells amazing and tastes great! I used low sodium chicken broth and taco seasoning. Mine wasn’t overly salty at all. It definitely needs some heat to it. I’m adding hot sauce to the next one.

    I was a bit disappointed in this recipe. The ranch didn’t really add any flavor and even though I used less broth, it was so soupy that I had to reduce it on the stove top.

      I came here to ask this exact question! I want to use my instantpot but im not sure about the adjustments. I dont like leaving the crockpot on all day with no one home, so the instantpot is perfect.

      Ok i tried this in the instantpot tonight. I used the preset chicken button and used the highest setting. Cooked perfectly and took 30 minutes. Only issue is its very watery. So i pulled it all apart, transferred the chicken and all the liquid into a pot on the stove, simmered on low (uncovered) for 10 minutes, then sturred in a little cornstarch. It thickened up nicely and tasted wonderful.
      Also, i used low sodium broth and taco seasoning. Next time i will also add peppers abd onion to the instapot with the chicken.

    I put the meat, lettuce, tomato, cheese and salsa in a flour tortilla because I didn’t have any taco shells. It was great. My husband was trying to figure out what kind of chicken was in the crockpot because the house smelled so good. I was busy finishing up Christmas crafts so it was good to have dinner cooking. Husband said, this would be good in a taco shell. I will try that next time if I have them. 5 stars
