I love getting after holiday food on sale. You know, after the 4th of July, hot dogs are on sale, and after Thanksgiving, turkey is on sale. Well after St. Patrick’s Day, corned beef is on sale. So I snagged one up and put it in the crock pot! Here is the recipe:
Ingredients:
1 large corned beef packaged with seasoning packet
3 russett potatoes
1-2 cups baby carrots
3 cups water
1 small cabbage
Instructions:
1. Peel and quarter the potatoes and place on the bottom of crock pot along with baby carrots.
2. Pour in 3 cups of water and sprinkle seasoning packet over the top.

3. Nestle your corned beef in the middle of the veggies, fat side up.
4. Cut cabbage into wedges and place on top.
5. Cook on low for 8-9 hours.
I cooked mine for 9 hours and the corned beef was absolutely perfect. It was so tender and tasty. We finished the whole thing and my husband wanted more. I should have bought a bigger piece of meat!

I have never really used my crock pot. But this really sounds great. I would use a Cottage ham instead of the corned beef. But are the carrots tender done? With such a low cooking temp. I always wonder if things are as tender as I like them. I'm just going to have to give it a try. thanks
